Only one Energy Card per turn PERIOD. This single element of the rules is what provides some of the MOST strategic decisions in the game... should you invest energy cards on Pokemon that are being damaged? (and when K-O'd, they lose all of those energy cards), or should you just let one of your Pokemon "take a fall" for the rest of your team while you build them up with plenty of energy to make efficient attacks?...
